How to make this spiral-cut 'Slinky' cucumber salad with spicy peanut butter sauce
Let's make a cucumber salad with a twist.
Madeline Park, a former dentist turned full-time food content creator known as Cafe Maddy, shared her simple, fun recipe for spiral cut cucumbers with spicy peanut butter sauce.
The technique to create a "Slinky"-like effect begins by placing a small Persian cucumber between two even-surface cutting boards or chopsticks to prevent the knife from cutting all the way through the vegetable.
Then, make even horizontal slices down the length of the cucumber, leaving about a quarter-inch at the bottom.
Flip the cucumber on its other side and place back between the boards or chopsticks. Repeat the thin slices, but this time on a diagonal bias or 45-degree angle.
Once the "Slinky" shape is ready to go, Park repeats the step with as many cucumbers as desired and salts them in a bowl to draw out the moisture for 30 minutes, which will make them extra crunchy.

Spicy Peanut Butter Sauce
Ingredients
2 tablespoons peanut butter
1 tablespoon sesame oil
2 tablespoons soy sauce1 tablespoon chili oil
1 teaspoon sugar
Dash of vinegar
Directions
Whisk all the sauce ingredients in a bowl.
Using a silicone pastry brush, apply the sauce directly to the slinky cucumber.
