2 healthy, flavorful 'pizza' recipes from Fit Men Cook for New Year's Day
Food and fitness blogger Kevin Curry helped "Good Morning America" ring in 2021 with two simple, savory and healthy breakfast recipes.
The Fit Men Cook founder has created a community around healthy food ideas and shared his spin on pizza for breakfast. It's packed with veggies, protein and lots of flavor.
Bagel Breakfast Pizzas
Makes: 4 servings
Ingredients
2 everything bagels, sliced in half
1 tablespoon olive oil
1/2 cup chopped lean sausage, or substitute with roasted veggies
4 eggs, lightly beaten
1/2 cup diced colorful bell peppers (red, green, yellow, orange)
Pinch of sea salt & pepper
4 tablespoons pesto
1 cup choice of shredded cheese
Directions
Preheat oven to 400 degrees.
Slice open "everything" bagels. Toast in the oven for 3 to 5 minutes. Once toasted, add one tablespoon of pesto to each bagel. Set aside.
Set a nonstick skillet on medium heat. Once hot, add oil and sausage. Cook for two minutes to warm the sausage through. Increase the heat to medium high, pour in the eggs and bell peppers. Pull the eggs from side to side in the skillet using a spatula until scrambled.
Evenly divide the egg scramble among the 4 bagel halves and lightly sprinkle cheese on top.
Place back in the oven to melt the cheese and brown the edges for one to three minutes.
What makes this recipe a healthy alternative?
Pesto replaces the butter or cream cheese on your morning bagel. Plus, it's packed with antioxidants and calcium.
Open-faced bagels reduce carbs but the bagel is still hearty and high in protein.
Cast Iron Tex-Mex Enchilada Pizza
Ingredients
Olive oil spray
1/2 lb 95% lean ground turkey or beef (or veggie ground)
1/2 cup diced onion
1 tablespoon chili powder
2 teaspoons smoked paprika
1 teaspoon cumin
Pinch of sea salt & pepper
3/4 cup red enchilada sauce, mild heat
1/2 cup black beans, drained
3/4 lb (store-bought) pizza dough
1 cup reduced-fat shredded Mexican cheese
1 Roma tomato, diced, no seeds
1 cup thinly sliced colorful bell peppers
Garnishes
Fresh chopped cilantro
Diced avocado, optional
Directions
Preheat oven to 420 degrees.
Set a nonstick skillet on medium high heat. Once hot, lightly spray with olive oil, then toss in the ground meat and onions. Chop up the meat as it cooks for about one minute.
Sprinkle in the seasonings and continue chopping up the meat until it is about 90% cooked, and there are still some small visible pink pieces of meat, about four to six minutes.
Pour in the enchilada sauce and black beans, mix everything together and remove from the heat.
On a clean surface, use a rolling pin to roll the dough into a circle, wide enough to cover the inside of the cast-iron skillet, about 11 inches. Spray the cast iron with olive oil, add the pizza dough and form a small rim along the interior edge of the skillet to form the crust.
Add the enchilada meat sauce and spread it out evenly over the dough.
Sprinkle in cheese, then diced tomato and thinly sliced bell pepper.
Bake in the oven for 12 to 15 minutes, until the dough is cooked through to your desired liking.
Garnish with fresh cilantro and avocado if desired.
