What's for dinner? Beefless tacos with cauliflower queso

Carleigh Bodrug, cookbook author, food creator and founder of "Plant You," has no shortage of delicious, nutritious plant-based dinner ideas and her beefless tacos are both good to eat and good for the planet.

Beefless Tacos with Cauli Queso
Prep time: 15 mins Cooking time: 20 mins Servings: 4
Ingredients
8 small tortillas or taco shells
1 lime (sliced or cut into wedges)
Fresh or pickled jalapenos to taste
Grated tofu:
1 block extra firm tofu, grated
4 tbsp tamari soy sauce
1 tbsp garlic powder
1 tbsp paprika
1 tbsp apple cider vinegar
1 tbsp maple syrup
Fresh salsa
1 red onion (peeled, finely diced)
2 cloves garlic (peeled, minced or diced)
2 tomatoes (finely diced)
1 cup fresh cilantro or parsley (finely chopped)
4 tbsp lime juice
Salt and pepper to taste
Cauliflower queso
1/4 head cauliflower (broken into florets)
4 tbsp coconut milk
1 tbsp cornstarch
2 tbsp nutritional yeast
1/4 tsp paprika
1/4-1/2 tsp turmeric
1/4 tsp onion powder
1/4 tsp garlic powder
1/4 cup water
Instructions
Boil cauliflower florets until softened, approximately 10 minutes. Drain the water and transfer them to the blender. Add the rest of the queso ingredients and blend until smooth. Transfer the sauce to a saucepan and slowly heat it in low medium heat until it starts to thicken.
To make the grated tofu, combine tofu with the spices, soy sauce, apple cider vinegar, and maple syrup. Mix well, then transfer to a lined baking sheet. Bake at 400F for about 20 minutes.
In a mixing bowl, combine tomatoes, cilantro, onion, garlic, lime juice, salt and pepper for your fresh salsa.
Warm up the tortillas on the grill or in the microwave. Add grated tofu, fresh salsa, and cauliflower queso. Squeeze some fresh lime juice on top and add some jalapeños to taste. Enjoy!
